About Us

Chef George Dailey’s culinary journey is truly remarkable, shaped by his diverse upbringing and experiences. His fusion of flavors from Spain, England, and Venezuela combined with his passion for both classic and contemporary cuisine, has allowed him to create unique dining experiences. His dedication to using locally sourced-seasonal ingredients and his commitment to storytelling through food make him a standout figure in the Baltimore culinary scene.

Starting with his early inspiration from his mother’s Spanish & Venezuelan recipes, and his British cooking heritage, Chef Dailey’s journey took him from Venezuela to England and then to Boston, where he honed his skills in some of the city’s finest restaurants.

In 2004 Chef Dailey and his wife Jessica moved their family to Baltimore where his wife grew up, and subsequently opened On the Hill Cafe in Bolton Hill which established him as a neighborhood favorite for fast casual cuisine and coffee since 2005.

The launch of Centro, a Spanish tapas bar in Federal Hill, in 2010 showcased his Spanish roots and culinary prowess. The extensive tapas menu received praise from both the local community and the broader restaurant scene, solidifying his reputation as a talented chef.

In 2018, Chef Dailey took his culinary journey to the next level by purchasing a building in Bolton Hill and opening Cookhouse in 2020. Cookhouse is where Chef Dailey’s inventive menus come to life, reflecting his commitment to using locally sourced ingredients and his love for blending diverse culinary traditions. The weekly-changing menu at Cookhouse is a testament to his culinary evolution over the past three decades.

Gabriel Valladares born and raised in Silver Spring, MD, where he spent his formative years immersed in the vibrant culture of the region. His fascination with the art of photography and the craft of printmaking became evident at an early age. This path led him to the esteemed Maryland Institute College of Art (MICA) in Baltimore, where he pursued a formal education to refine his artistic inclinations.

Gabriel’s affinity for the craft of cocktail making soon evolved beyond a pastime. Over time, his love for mixology flourished, prompting him to embark on a journey of exploration and experimentation. With determination, Gabriel consistently sought out techniques and innovative flavor combinations, consistently challenging the traditional boundaries of mixology.
